Skilled Butcher - Carcass Breakdown & Meat Traceability
You will work with the butcher team to prepare meat for our retail customers, hotels and restaurants across Jersey.
This is a hands-on role working in a chilled preparation environment with early morning starts.
Key Responsibilities
- Break down whole beef carcasses into primals and secondary cuts
- Prepare meat for further processing and retail sale
- Support the butcher team with carcass preparation
- Ensure accurate traceability from carcass to finished product
- Label and track products correctly
- Maintain high standards of food safety and hygiene
- Help ensure orders are prepared efficiently
- Take part in the daily clean down of tools and work areas
Essential Experience
Applicants must have proven experience breaking down carcasses, especially beef.
You should be confident working with:
- Whole beef carcasses
- Primal and secondary beef cuts
- Butchery tools and saws
- Food safety procedures in a professional butchery environment
This role requires strong knife skills and attention to detail.
The successful candidate will:
- Be an experienced butcher
- Have strong carcass breaking skills
- Work well in a busy production environment
- Have a good understanding of meat traceability and food safety
- Be reliable and comfortable with early starts

MEAT PRODUCTION ASSISTANT
You will help prepare and pack orders for the hotels, restaurants and customers we supply.
Days are fast-paced as we prepare meat for sale in our shop and delivery across the island.
The work is hands-on and physical. You will be working on your feet in a chilled food preparation area and lifting trays or boxes of meat.
In return, you will benefit from early finishes every day and the chance to learn new skills within the butchery trade.
Key Responsibilities
- Prepare and pack meat orders
- Weigh, portion and label products
- Vacuum pack products ready for delivery
- Help the butcher team with daily preparation
- Assemble orders for delivery routes
- Move stock and trays in the chilled area
- Follow food safety and hygiene rules at all times
- Keep the work area clean and organised
- Take part in the daily clean down at the end of the shift
We are looking for someone who:
- Is fit and physically capable
- Is reliable and able to start work early in the morning
- Works well as part of a team
- Is keen to learn new skills
Experience in kitchens, food preparation, hospitality or similar work is helpful but not essential. Training will be provided.
